Galician fine clam
The Galician fine clam (ruditapes decussatus) or also rail clam is the variety of clam with the greatest gastronomic value due to its quality, flavor and it is also the one that lasts out of the water the longest, a total of up to 6 days.
Just like razor clams or oysters, it is advisable to keep the fine clams in the same mesh in which we bought them, because being tight will prevent them from opening and therefore retain all their flavor of the sea.
