European seabass
The Galician wild sea bass (Dicentrarchus labrax) is one of the most exquisite fish and currently the most appreciated in Spanish cuisine as it is a semi-fatty fish. It is a very voracious and territorial Galician fish and is found, like the Galician bream, in waters where the sea beats and moves a lot, such as breakers, cliffs or petons.
It has a compact and very tasty white meat, difficult to replace with another fish, since its flavor and texture is very particular and very different from farmed sea bass. It is also a perfect fish to start the little ones in the world of fish.
